11 Slimming-Friendly, One-Pan Winter Warmer Recipes You Need to Try

When you come home after a long day, and it’s cold and dark outside, nothing beats the convenience of chucking all of your ingredients into one easy-peasy pot, pan or tray. 

These slimming-friendly one-pan winter warmer recipes don’t just make prepping comfort food effortless, they make it slimming friendly and delicious too. 

Autumn and winter is all about potato-topped hotpots, fiery stews and juicy-sweet warm puddings, and we’ve got plenty of those right here for you!

1. Sausage Tartiflette

There’s nothing we love more than putting our own slimming-friendly spin on classic, cheesy comfort foods. This Sausage Tartiflette is no exception; while the traditional dish from the French Alps might come filled with bacon, potatoes and heaps of full-fat cheese, we’ve used clever swaps to lighten things up a bit.

For our one-pan recipe, we’ve stirred together a cosy combination of reduced-fat pork sausages and leeks. Don’t forget to add a teaspoon of dried sage to really take those pork flavours up a notch!

2. Vegetable Stew with Orzo

Before you crack on and make this winter warmer Vegetable Stew with Orzo, you’ll need to get your Instant Pot out.

We’ve made sure this one’s packed with plenty of filling, nutritious veggies. Once everything’s chopped and prepared, you’ll pop it all in the pot with stock and orzo.

This is where the beauty of an Instant Pot comes in. In one gadget, you can pressure cook for 15 minutes and then slow cook for an hour, until the orzo is fluffy and tender.

3. Slow Cooker Beef Bourguignon

It’s impossible to describe how good our Slow Cooker Beef Bourguignon smells while it’s bubbling away. Is it any wonder it’s one of our favourites to come home to?

By swapping just a few of the more indulgent French-inspired ingredients, we’ve made ours as light as 320 calories per serving (that leaves plenty of room for a side of Roasted Garlic Mashed Potato from our Enjoy book).

4. Lancashire Hotpot

Nothing says ‘comfort food’ quite like Lancashire Hotpot. The taste of childhood teatimes, we’ll always turn to this recipe when we fancy a hearty, potato-topped hug.

The ingredients list for the traditional version is really short and simple, and ours is too. While we didn’t think twice about the lamb we used before PON, nowadays we make sure all visible bits of fat are removed (we promise, you can hardly taste the difference!).

This one-dish wonder tastes best scooped onto a plate with a side of beetroot, red cabbage and mixed veg.

5. One-pot Mediterranean-Style Chicken Orzo

Whenever someone tells us they’ve never had orzo before, we instantly recommend our One-pot Mediterranean-Style Chicken Orzo

It’s been a hit on our website since day one, or you can turn to pages 194-195 of our first-ever cookbook if you’d rather have it at your fingertips.

Just like the name suggests, the succulent chicken thighs, tomatoes, veggies and store cupboard herbs and spices all simmer away in one pot or pan at the centre of your oven, making it deliciously easy.

You’ll know it’s ready after around an hour, when the sauce is bubbling, the chicken is cooked and the orzo is tender.

6. Sausages with Creamy Lentils

Bring on the crusty wholemeal bread! You need to mop up every last drop of our one-pan Sausages with Creamy Lentils. We’re convinced it’s the dreamy combination of pork, sage and apple that makes it so moreish.

The sweetness of crisp apple slices with filling, peppery lentils creates a beautiful contrast that takes our velvety sauce to the next level.

Once everything’s combined, you’ll let it bubble for just over half an hour, until the lentils are fluffed up. That’s your cue to thicken the sauce with reduced-fat cream cheese.

7. One-pot Chicken and Tomato Rice

Coated in a smoky homemade seasoning that’s similar to Cajun spice, this One-pot Chicken and Tomato Rice is a winter warmer that you’ll want to serve on repeat.

As well as plenty of herbs and spices, we’ve also thrown in lots of colourful vegetables to make every portion nourishing and tasty.

It’s well worth investing in a good-quality casserole dish for cooking one-pan creations. We swear by this trusty MasterClass pot – it cuts down the washing-up by going straight from the hob into the oven.

8. Campfire Stew

There’s no denying the popularity of our Campfire Stew. A community favourite since our very first cookbook, the rich and smoky flavours have also inspired countless dishes since.

It’s up to you whether you choose to make it in your oven, your slow cooker, or an Instant Pot. Either way, it’s all cooked up in one easy pot!

9. Vegetable Stew with Cheesy Dumplings

The thing about our Vegetable Stew with Cheesy Dumplings is it looks and tastes so impressive, and yet it’s really simple to make.

It’ll take a couple of hours to rustle up in the oven, or you can leave it to simmer while you’re going about your day in the slow cooker.

The dumpling mixture is added to the pot around 40 minutes before you’re ready to serve; we’d recommend finishing them off under the grill to get them nice and crispy, with a lovely golden colour.

10. Sausage Traybake

Always coming to the rescue on busier days, we could never get bored of throwing a Sausage Traybake in the oven. There’s no need for piles of pans or time-consuming prep, just parboil the potatoes and carrots and then throw everything onto a tray or into a roasting dish.

To bring everything together, you’ll coat the sausages, veggies and wedges of apple in a lip-smacking honey and mustard sauce. Our favourite part is watching all of the ingredients caramelise and turn a glorious golden brown.

11. Autumn Berry Cobbler

Who says one-pan winter warmers have to be savoury? This American-style Autumn Berry Cobbler is a cosy, autumnal treat. It’s filled with a simple combination of seasonal apples, raspberries and blackberries, baked until syrupy-sweet under a crunchy layer of oats.

It’s so easy to make in one dish, the hardest part is always choosing whether to enjoy it with low-calorie ice cream, or a glug of homemade Custard.
